About the Project
Eurotas Hotels d.o.o. successfully completed the WasteLess – Digital Food Waste Monitoring for Sustainable Hospitality project, aimed at reducing food waste in hotels and restaurants through digital monitoring, data analysis, and improvements to everyday operational processes.
As part of the project, a digital food waste measurement system was introduced in selected hotel and restaurant kitchens. Using smart scales, we monitored the quantities and types of food waste and stored the collected data in a digital system. This provided chefs and managers with better insight into how and where food waste was generated, enabling them to plan food purchasing, meal preparation, portion sizes, and menu composition more accurately.
The project was carried out in cooperation with the Faculty of Tourism Studies – Turistica, which contributed to data analysis, methodology development, and employee training, as well as with the Austrian restaurant Esszimmer, where the approach was also tested in a fine-dining environment.
Employee involvement in the kitchens was an important part of the project. A digital tool alone cannot reduce food waste unless it is supported by consistent data recording, an understanding of the collected data, and changes in everyday practices. Particular attention was therefore given to employee training, awareness-raising, and their active involvement in identifying practical solutions.
The project demonstrated that systematic food waste monitoring can contribute to reducing environmental impacts, improving cost efficiency, and promoting more responsible food management in the hotel and restaurant sector.

The WasteLess – Digital Food Waste Monitoring for Sustainable Hospitality project was implemented within the framework of the TASTE – Go Green, Get Digital, Be Resilient project.
